Mardi Gras Rice

Ingredients

- 8 cups cooked rice
- 1 cup frozen green pea, thawed
- 1 cup frozen corn, cooked and drained
- 1/2 head red cabbage, shredded
- 1/3 cup diced green pepper
- 3 tablespoons sliced green onions
- 3 tablespoons chopped parsley
- 1 cup mayonnaise or 1 cup salad dressing
- 1 teaspoon creole seasoning
- 1 teaspoon curry powder
- lettuce leaf
Recipe
- 1 combine first 7 ingredients in a large bowl.
- 2 set aside.
- 3 combine mayonnaise, creole seasoning, and curry powder; add to rice mixture, tossing gently.
- 4 chill.
- 5 serve on lettuce leaves.
- 6 yield: 16 servings.
