Sauteed Sesame Cabbage

Ingredients

  • 3/4 cup cabbage, shredded
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 teaspoons sesame seeds
  • 1/4 teaspoon soy sauce

Recipe

  • 1 in a saucepan or fry pan, put the oil, half the sesame seeds, the soy sauce and the red pepper flake on a medium high heat. heat the oil to a light sizzle and until the sesame seeds turn golden brown.
  • 2 put the cabbage in the pan and turn it in the heat until it wilts, about 3 minutes. sprinkle the remaining sesame on top of the cabbage, toss to coat and serve.

Hunan Fried Rice

Ingredients

  • 3 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 1 tablespoon dark sesame oil
  • 1 tablespoon light brown sugar
  • 1 teaspoon minced fresh ginger
  • 1 garlic clove, minced
  • 1/4-1/2 teaspoon cayenne
  • 1 lb extra firm tofu, drained and cut into 1/2-inch dice
  • 2 teaspoons cornstarch
  • 2 tablespoons cold-pressed canola oil
  • 1 red bell pepper, chopped
  • 1 cup shredded cabbage
  • 1/4 cup minced scallion
  • 3 cups cold cooked rice

Recipe

  • 1 in a shallow bowl, combine the soy sauce, sherry, sesame oil, brown sugar, ginger, garlic, and cayenne.
  • 2 add in the tofu and refrigerate for 30 minutes.
  • 3 drain the tofu, reserving the marinade; blend the reserved marinade with the cornstarch and add to the tofu, tossing to coat.
  • 4 heat the oil in a large skillet or wok over med-high heat.

Sauteed Shrimp Rolls

Ingredients

  • 1/2 cup sour cream
  • 1/2 lime, juice of
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon salt
  • 2 drops hot pepper sauce, to taste
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 lb uncooked large shrimp, peeled,deveined and tails removed
  • 4 soft sandwich buns or 4 hot dog buns
  • 1 avocado, halved,pitted,sliced
  • 1/2 cup chopped cabbage

Recipe

  • 1 mix together the sour cream, lime juice, cilantro, 1/4 teaspoon of the salt and the hot pepper sauce; set aside.
  • 2 heat butter and olive oil in a medium skillet over medium heat until butter is melted; remove 1 tablespoon of the mixture from the skillet to a bowl and set aside.
  • 3 add garlic and pepper flakes to skillet; cook until garlic is soft, about 1 minute.
  • 4 increase heat to medium-high; add shrimp and remaining 1/4 teaspoon salt; cook, stirring constantly, until just pink, about 3 minutes.
  • 5 meanwhile, heat broiler to high; brush rolls with reserved oil and butter mixture; place open rolls under broiler and broil until just beginning to brown, about 1 minute.
  • 6 spread 1 teaspoon of the sour cream mixture inside each roll; layer with 1 tablespoon chopped cabbage, shrimp and avocado slices; top each with 1 teaspoon more sour cream mixture.
  • 7 place remaining sauce in a bowl to pass at the table.

Hungarian Cabbage Rolls

Ingredients

  • 1 medium head cabbage
  • 3 slices bacon
  • 1 lb ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon paprika
  • 1/2 cup chopped onion
  • 1 cup raw potato, grated
  • 1 cup cooked rice
  • 2 cups tomato juice

Recipe

  • 1 wilt the cabbage in hot water.
  • 2 cook the bacon until crisp; chop and mix with the rest of the ingredients except for the tomato juice.
  • 3 shape the meat mixture into 12 rolls, wrap in the cabbage leaves.
  • 4 place in the pan the bacon was cooked in; add the tomato juice and simmer for 1 hour.

Ingredients

  • 1 beaten egg
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 1 teaspoon worcestershire sauce
  • 3/4 teaspoon salt
  • 1 dash pepper
  • 1 lb ground beef
  • 3/4 cup cooked rice
  • 6 large cabbage leaves
  • 1 (10 3/4 ounce) can condensed tomato soup
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice

Recipe

  • 1 preheat oven to 350.
  • 2 in a bowl combine egg, milk, onion, worcestershire sauce, salt, and pepper; mix well. add meat and cooked rice; mix well.
  • 3 remove center vein of cabbage leaves, keeping each leaf in 1 piece. immerse leaves in boiling water for about 3 minutes or until limp; drain leaves.
  • 4 place 1/2 cup meat mixture on each large leaf or 1/4 cup on medium ones; fold in the sides. start rolling from an unrolled edge. making sure the folded edges are included inside the roll. arrange in a 9x13 oven proof dish.
  • 5 stir together the soup, brown sugar, and lemon juice; pour the mixture over the top of the cabbage rolls.
  • 6 bake, uncovered for 1 1/4 hours, basting once or twice with sauce. makes 6 servings.

Hungarian Cabbage Noodles (kaposztas Taszta)

Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 large green cabbage, cored and sliced thin
  • salt, to taste
  • 1 (10 ounce) bag wide egg noodles
  • 1 tablespoon unsalted butter
  • pepper, to taste

Recipe

  • 1 bring 4 quarts of water to a boil in a large pot for the noodles.
  • 2 meanwhile, heat 1 tablespoon of the oil in a large skillet over medium-high heat until shimmering. add half of the cabbage, season with 1/4 teaspoon of salt, and cook, tossing frequently, until golden brown, 5 - 8 minutes. transfer the cooked cabbage to a place. repeat with the remaining cabbage.
  • 3 add 1 tablespoon of salt and the noodles to the boiling water and cook until al dente.l drain the noodles and transfer back to the pot. add the reserved cabbage and butter, toss to combine, and season to taste with salt and pepper. serve.

  • 2 garlic cloves, minced
  • 1 teaspoon gingerroot, minced

  • 4 shiitake mushrooms or 8 button mushrooms, stems removed, thinly sliced
  • 1/2 lb firm tofu, sliced into 1/4 x 1 inch strips (0.5x2.5cm)
  • 1 cup napa cabbage, shredded (300g)
  • 1 carrot, thinly sliced
  • 1/3 cup frozen peas (70g)
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin (chinese cooking wine)
  • 1 tablespoon cornstarch, dissolved in
  • 3 tablespoons cold water
  • 1 -2 egg, well-beaten (optional)
  • 1/2 cup green onion, chopped (90g)
  • 1/4 cup cilantro, chopped (9g)
  • 1/2 lb cooked chicken or 1/2 lb lamb, cubed
  • 1 teaspoon hot chili paste (optional) or 1 teaspoon chili sauce (optional)

Recipe

  • 1 bring stock to a boil over medium-high heat in a 2 1/2- to 3-quart saucepan.
  • 2 add garlic, ginger, black pepper, and tamari.
  • 3 reduce heat and simmer 1 minute.
  • 4 add mushrooms, tofu, cabbage, carrots, peas and meat.
  • 5 stir and let simmer 5 minutes or until vegetables are tender.
  • 6 stir in vinegar, mirin and cornstarch mixture.

Oh So Good Cabbage Rolls

Ingredients

  • 1 -2 head cabbage
  • 1 lb ground beef
  • 1/2 lb ground lamb
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small onion, grated
  • 1 cup shredded cabbage
  • 1/2 green bell pepper, diced small
  • 1/4 cup green onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons parsley, minced
  • 1 small red potatoes, grated
  • 2 eggs
  • 1/2 cup raw rice
  • 1 can tomato sauce
  • 2 cans tomato sauce
  • 1/4 cup brown sugar
  • 1/4 cup lemon juice

Recipe

  • 1 blanch cabbage (s) for approximately 10 minutes.
  • 2 when cool enough to handle, separate into leaves.
  • 3 combine meat, salt, pepper, rice, shredded cabbage, shredded potato, eggs, onions, bell pepper, garlic and parsley and small can of tomato sauce.
  • 4 mix well.
  • 5 place equal portions of meat mixture in center of each cabbage leaf, fold ends over, roll up and fasten with toothpicks.
  • 6 add one tablespoon oil each to two large skillets and place cabbage rolls sided by side in skillets.
  • 7 to the two small cans of tomato sauce add the brown sugar and lemon juice and pour over cabbage rolls.
  • 8 cover skillets and simmer for 30 minutes, basting occasionally.
  • 9 uncover and continue cooking 30 minutes more, basting occasionally.
  • 10 sauce will thicken and become a wonderful sauce that adheres to cabbage rolls.
  • 11 dash of louisiana hot sauce can be added to top of cabbage rolls for those that enjoy it.

Ruth's German Red Cabbage And Apples

Ingredients

  • Servings: 12
  • 6 lbs red cabbage (about 2 medium heads)
  • 4 -5 lemons, juice of
  • 8 cloves (or to taste)
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 2 apples, any kind peeled and sliced thin
  • 12 ounces bacon, diced
  • 1 medium onion, diced
  • 1/2 cup water

Recipe

  • 1 saute onions and bacon until light brown in same pot (don't drain bacon grease).
  • 2 wash and shred cabbage fairly thin. put on top of bacon and onions in pot. pot will be full--cabbage will shrink. add rest of cabbage to pot.
  • 3 add remaining ingredients. simmer on low in covered pot for 2 hours, stirring often so it won't burn.
  • 4 best if made one day in advance. allow to cure for no less than 24 hours in refrigerator before serving.

Holubsti--ukranian Cabbage Rolls

Ingredients

  • 1 head cabbage
  • 2 cups uncooked rice (i prefer wild rice, but long grain or a mix of the two will work)
  • 2 1/2 cups boiling water
  • 1/4 cup butter
  • 1 medium onion, peeled, minced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 lb ground beef (optional) or 1/2 lb ground sausage (optional)
  • 1 1/2 cups tomato juice
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 pinch black pepper

Recipe

  • 1 place the cabbage in a microwaveable bowl with a small amount of water. cover with plastic wrap with a small hole to allow for escaping steam. microwave on high for five minutes. remove the cabbage, turn it over, and microwave for another five minutes. remove, and let cool.
  • 2 in a saucepan, combine boiling water, salt and rice, bring to a boil, cover and simmer just until the water is absorbed, about 14 minutes. turn off the heat and let stand.
  • 3 preheat your oven to 350.
  • 4 in a large skillet, melt the butter and sauté the onions until golden. mix with the rice. gently stir in the ground meat if you choose to use it.
  • 5 grease the bottoms and sides of a large casserole dish.
  • 6 carefully peel off a leaf from the cabbage head. you may need to cut the leaves in half, and trim the large center vein. place a spoonful of the rice mixture in the center of the leaf, and roll it up like a burrito, carefully tucking sides in first, then rolling the leaf. place crease side down in the casserole. repeat until the casserole is filled, or you run out of cabbage or rice mixture.
  • 7 for the sauce:
  • 8 combine the tomato juice with the melted butter, salt and pepper and pour over the cabbage rolls. bake for 1 ½ to 2 hours. serve with sour cream, if desired, or more tomato sauce.

  • 1/4 cup vinegar

  • 3 cups shredded red cabbage
  • 2 large granny smith apples, peeled and chopped
  • 1 cup dried sweetened cranberries

Recipe

  • 1 whisk together the first 5 ingredients in medium bowl. cover dressing to chill till ready to use.
  • 2 combine green cabbage and next 3 ingredients.add desired amount of dressing to coleslaw and toss gently to coat. serve immediately.

Minced Meat And Cabbage Brown Rice

Ingredients

  • Servings: 2
  • 1 cup organic uncooked brown rice
  • 50 g organic cabbage
  • 100 g ground lamb
  • 1 pip garlic (minced)
  • 1 teaspoon stock, granules
  • seasoning
  • 2 tablespoons soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1 teaspoon rice wine
  • 1 teaspoon sugar
  • 50 ml water

Recipe

  • 1 mix the stock granules with the brown rice in a rice cooker and cook.
  • 2 wash cabbage until clean and dice.
  • 3 heat pan and saute minced garlic until fragrant, add in minced lamb and stir-fry for about 1 minute; add in seasoning and stir-fry until well-done. set aside.
  • 4 once the brown rice is cooked, spread the dice cabbage into the rice cooker and steam for another 15 minutes.
  • 5 last, add the stir-fried lamb in and use a spatula and stir it up side down.
  • 6 serve hot.

Slow-roasted Lamb With Cabbage, Carrots And Caraway

  • 1 tablespoon extra-virgin olive oil
  • 3 1/2 lbs boneless lamb shoulder
  • salt and pepper
  • 1 head cabbage, cored, thinly sliced
  • 4 carrots, thinly sliced
  • 2 teaspoons caraway seeds
  • grainy mustard

Recipe

  • 1 preheat the oven to 325°f in a large dutch oven, heat 1 tablespoon extra virgin olive oil over medium heat.
  • 2 pat dry the lamb shoulder and season with salt and pepper; add to the pot and cook, turning occasionally, until browned, about 12 minutes.
  • 3 cover and roast in the oven until fork-tender, about 3 hours. transfer to a cutting board and let rest for 10 minutes before shredding the lamb. pour off and discard the fat from the pot.
  • 4 add the cabbage and carrots. cover and cook over medium-high heat, stirring occasionally, until the cabbage is wilted, 8 to 10 minutes. season with salt and pepper and serve with the lamb. sprinkle caraway seeds on the vegetables; serve with grainy mustard.

Hungarian Cabbage Strudel

Ingredients

  • Servings: 4
  • 8 ounces unsalted butter, more for greasing pan
  • 1 lb cabbage, cored and shredded (about 1/2 head)
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 10 sheets phyllo dough, defrosted

Recipe

  • 1 preheat oven to 350 degrees f; lightly butter a large baking pan and spread cabbage evenly in pan.
  • 2 season with salt and pepper.
  • 3 cut up 4 ounces (1 stick) butter into small pieces, and sprinkle over cabbage; cover with foil, sealing edges.
  • 4 bake until tender and golden, 45 minutes to 60 minutes, occasionally lifting foil and mixing cabbage, then resealing.
  • 5 remove from heat, uncover and allow to cool to room temperature (may be stored, covered and refrigerated, for up to 24 hours; use chilled).
  • 6 set oven temperature to 400 degrees f.
  • 7 in a small saucepan, melt remaining 4 ounces butter.
  • 8 place a sheet of parchment paper on a work surface with the narrow end closest to you, and top with a sheet of phyllo dough.
  • 9 brush lengthwise (up and down) with a little butter.
  • 10 top with another sheet of phyllo, and brush again with butter.
  • 11 repeat until all 10 sheets are buttered and stacked.
  • 12 arrange cabbage on dough, at end closest to you, in a thick layer 2 inches deep; spread evenly to edges.
  • 13 with the help of the parchment paper, roll phyllo, starting at the end with the cabbage, as you work, adjust parchment paper so that phyllo is rolled, enclosing cabbage, without the paper.
  • 14 brush top of roll with butter, place on baking sheet and bake until golden, about 40 minutes.
  • 15 serve hot or warm.

Ground Beef & Cabbage Casserole

  • 2 1/2 lbs ground beef, cooked and drained
  • 1 medium sweet green pepper, chopped
  • 1 medium yellow onion, chopped
  • 1 (8 ounce) can cream of tomato soup
  • 1 (8 ounce) can cream of mushroom soup
  • 1 (8 ounce) soup can water
  • 1 (6 7/8 ounce) box beef flavored rice-a-roni (with seasionong pack)
  • salt & pepper
  • 1 small head of cabbage, chopped (3 or 4 cups)

Recipe

  • 1 combine all ingredients except cabbage and mix well.
  • 2 place chopped cabbage in greased casserole dish. (i used large dutch oven.).
  • 3 pour meat mixture over the cabbage, do not stir.
  • 4 cover and bake @350 for about 1 1/2 hours.

Fava Bean And Cabbage Salad

  • 2 cups shredded cabbage
  • 1 (14 ounce) can of drained fava beans (any would do)
  • 1/2 cucumber (sliced and quartered)
  • 1 chopped tomato
  • 2 sliced green onions
  • 1/2 stalk celery
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic salt
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons vegetable oil or 3 tablespoons olive oil

Recipe

  • 1 mix together beans and chopped vegetables.
  • 2 season with pepper and garlic salt.
  • 3 add vinegar and oil.
  • 4 mix together well.
  • 5 let marinate for minimum of 2 hours.

Holly's Turkey Soup

Ingredients

  • Servings: 6
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 3 carrots, chopped
  • 4 celery ribs, chopped
  • 1/2 onion, chopped
  • 1/2-1 tablespoon dried parsley, depending on your taste
  • 1/2-1 tablespoon dried italian seasoning, depending on your taste
  • 4 cups turkey, cut into bite sized pieces
  • 4 cups turkey stock
  • 4 cups water
  • salt and pepper

Recipe

  • 1 heat the oil and butter over medium heat in a stock pot until the butter is melted.
  • 2 add the carrot, celery, onion, parsley and italian seasonings. cook for 8 minutes, stirring occasionally.
  • 3 stir in the turkey, stock and water.
  • 4 turn the heat up to high and bring to a boil.
  • 5 turn down to low, just barely a simmer, and cook for about an hour or until the carrots are fork tender.
  • 6 add salt and pepper if need be and serve.
  • 7 *some nice late add-ins ~ zucchini, napa cabbage, rice, noodles.

Mormor's Kaukswe

Ingredients

  • Servings: 6
  • 1 whole chicken
  • 2 teaspoons turmeric
  • 2 quarts water
  • 5 medium onions
  • 4 garlic cloves
  • 1/4 cup peanut oil
  • 2 teaspoons chili powder
  • 4 tablespoons split pea flour
  • 1 coconut
  • 3 cups boiling water
  • 1 lb egg noodles
  • 5 hard-boiled eggs
  • 2 limes
  • 1/4 small cabbage
  • 1 bunch green onion
  • 1 bunch cilantro
  • 1/2 cup peanuts
  • fish sauce

Recipe

  • 1 cut the chicken into large pieces, rub with turmeric and simmer in water with salt until tender. remove the meat from the bones, reserve chicken stock.
  • 2 process 4 onions, garlic and ginger or pound with morter and pestle.
  • 3 slice one onion and brown in oil, add the chicken and fry for a few minutes. add the onion and garlic mixture and cook 3-4 minutes. add the chicken stock and the chili powder. simmer 30 minutes.
  • 4 mix the split pea flour with cold water (you can substitute cornstarch if you must), add this to the stock stirring constantly, cook for 15 minutes.
  • 5 prepare the coconut liquid by cutting the coconut up and putting it in a blender with 3 c hot water. blend and strain. add the liquid to the chicken stock and cook for 5 more minutes.
  • 6 blanch the noodles. serve separately with the garnishes. each person serves themselves to their own preference.

Spanish Garbanzos

Ingredients

  • Servings: 6
  • 1 lb dried garbanzo beans (washed and sorted)
  • 1/2 lb raw bacon, chopped
  • 1 large onion, chopped
  • 3 -4 lbs country-style boneless lamb ribs, cut in chunks
  • 2 linguica sausage, cut in chunks
  • 1 cup rice
  • 1 small head cabbage, cut in quarters and then cut the quarters in half
  • tabasco sauce (optional)

Recipe

  • 1 place the garbanzo beans, bacon and onion in a stockpot. cover with two inches of water. bring to a boil, turn heat down and simmer until the garbanzo beans are just starting to get tender (about 1 to 1 1/2 hours).
  • 2 add lamb chunks and linquica chunks to the pot. add more water to cover the contents to about 1 inch above. stir, cover the pot and simmer until the meat is done (1 to 1 1/2 hours). add more water during cooking, if necessary) to keep it about 1 inch above contents.
  • 3 add salt and pepper to taste. add the rice to the pot with 2 more cups of water and stir. place the cabbage on top, sprinkle with tabasco sauce, cover and simmer for 30 minutes. let sit off heat for 20 minutes before serving.
  • 4 serve with a bottle of tabasco sauce and a bowl of olive oil on the table. a loaf of good crusty french bread and a nice red wine makes an unforgettable meal.

Nasi Goreng

Ingredients

  • 1 1/4 cups long grain rice
  • 3 tablespoons vegetable oil
  • 6 slices smoked bacon
  • 1 1/2 cups lean lamb or 1 1/2 cups chicken, diced
  • 1 medium onion, chopped
  • 2 garlic cloves, crushed
  • 1 medium carrot, shredded
  • 2 cups cabbage, chopped
  • 4 cups water
  • 1 leek, sliced into rings
  • 1 teaspoon trassi oedang (shrimp paste)

Recipe

  • 1 boil the rice according to the instructions on the package. make sure that the rice is fluffy.
  • 2 in a wok or large skillet, heat the vegetable oil and fry the smoked bacon and lamb or chicken until done.
  • 3 add the onion and garlic.
  • 4 turn the heat to medium and simmer for about 5 minutes.
  • 5 meanwhile, in a separate large saucepan, bring the carrot and cabbage to a boil in about 4 cups of water. boil for 3 minutes; drain.
  • 6 add the leek and trassi oedang to the meat mixture; simmer for 3 minutes.
  • 7 add the cooked cabbage and carrot mixture.
  • 8 keep the entire mixture on low heat and stir in the beaten eggs until they are well incorporated.

  • 14 notes : trassi is a shrimp paste found in asian grocery stores. if you do not have any, you can either use peeled shrimp mixed in with the other meat, or leave it out all together.
  • 15 ketjap manis is a sweet soy sauce. use regular soy sauce if you can't find this type, but you are missing something wonderful! we don't use the cabbage in our nasi.
  • 16 instead of the spices listed above, we usually just buy a nasi goreng spice mixture at a dutch store, or chinese market. it is easy and very good.
  • 17 i don't know what curcumae is so i guess we don't put it in our nasi!

Slow-roasted Salmon With Cabbage, Bacon And Dill

  • 1 onion, diced
  • 1 cup water
  • 4 salmon fillets, 4-6 ounces each, skin removed

  • 1 lemon, juice of

  • 1 preheat oven to 250°f in medium saucepan, place bacon and heat over medium. cook, stirring occasionally, until fat is rendered from bacon and bacon is beginning to crisp. add onion and cook for an additional minute, then add cabbage and water. bring to a boil, then simmer until cabbage is tender, 20-25 minutes, adding more liquid if necessary. once very tender, season with salt, pepper, and half the dill.
  • 2 in the meantime, season salmon fillets with salt and pepper and place salmon on non-stick sheet pan. drizzle olive oil over fillets, top with half the dill, and finish with small knob of butter. cook 15-18 minutes for medium rare, or up to 25 minutes for medium, depending on thickness of fish. remove from oven and drizzle with lemon juice.
  • 3 divide cabbage and salmon among plates and garnish with more fill, if desired. serve immediately.

Ruth's Fried Cabbage

Recipe

  • 1 blanch chicken in boiling water 6 minutes, skimming any scum from the surface. drain well.
  • 2 rub it inside and out with the salt and stuff with a mixture of the ginger, crumbled stock cube, onion and gherkins.
  • 3 put the stuffed chicken in a flameproof casserole with 5 cups water.
  • 4 bring to the boil; then put the casserole in the oven, preheated to 180 c.
  • 5 cook for 1 hour 20 minutes, turning the chicken once. take the chicken out and arrange the cabbage wedges in the liquid place the chicken on top.
  • 6 return the casserole to the oven and cook for a further 40 minutes, serve straight from the casserole or from a large warmed tureen.

  • 1 mix the mustard and thyme together and generously brush both sides of pieces of rabbit.
  • 2 season well with salt and pepper.
  • 3 heat 3 tablespoons of oil in a large heavy saute pan and add the rabbit.
  • 4 cover and gently cook over moderate heat until the rabbit pieces are tender but still moist 15-20 minutes.
  • 5 cover and place rabbit in a casserole in a warm oven as they are finished.
  • 6 place the saute pan back on high heat and add the stock, wine and cream until mixture is lightly thickened about 8 minutes.
  • 7 strain carefully through a fine strainer and season to taste with salt, pepper and drops of lemon juice.
  • 8 stir in herbs and keep warm.
  • 9 in a small saute pan add bacon and saute over moderate heat until just crisp.
  • 10 remove and drain on paper towels discarding fat.
  • 11 add remaining tablespoon olive oil to pan and saute onions and mushrooms until vegetables just begin to color.

Holubky (basic Slovak Stuffed Cabbage Rolls)

  • 1 cook rice for 5 minutes; then drain.

  • 1 bring a medium saucepan of water to a boil.
  • 2 stir in the brown and wild rices, cover and cook over low heat, stirring occasionally, until tender, about 45 minutes. drain and transfer to a large bowl.
  • 3 meanwhile, bring a large saucepan of water to a boil, add the cabbage, cored side down, and cook over moderately high heat until the outer leaves begin to loosen, about 10 minutes.

  • 8 sometimes i cook pasta and add it to the bowl before i ladle out the soup, but it is good as is. don't add the pasta directly to the soup as it will break down and become a starchy mess.

Sauteed Red Cabbage With Raisins

Recipe

  • 1 boil potatoes until half done.
  • 2 add cabbage and more water if necessary, to barely cover. continue to cook gently until cabbage is cooked but still crisp. stir cabbage and potato now and then.
  • 3 while cabbage and potato are cooking melt oil in saucepan and add flour. cook over low heat stirring constantly until mixture is light tan in color.
  • 4 remove from heat; add garlic caraway seed and paprika; mix to combine. when cabbage adn potato are cooked add flour mixture to pot and stir in quickly so lumps do not form.
  • 5 continue to simmer so flavors blend about 10 minute season w/ salt and pepper to taste.

Hungarian Cabbage Rolls

Total Time: 4 hrs Preparation Time: 2 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 2 heads cabbage
  • 4 -5 lbs ground boneless lamb shoulder
  • 8 -10 garlic cloves, chopped
  • 2 cups uncooked long grain rice
  • 2 tablespoons sweet hungarian paprika
  • salt
  • pepper
  • 1 cup hot water
  • 4 ham hocks, cut in half
  • 32 ounces sauerkraut, rinsed
  • 16 ounces sour cream (to garnish)

Recipe

  • 1 get out your big turkey roasting pan or other large roasting pan with lid.
  • 2 cook both cabbages in boiling water, gently peeling off large outer leaves as they become pliable. continue peeling off leaves until you have at least 25. remove cabbage from pots and cool. core when cool, and save the rest.
  • 3 in a large mixing bowl, combine ground lamb (note: the reason for using a ground shoulder roast is because you want more fat than in normally found in ground lamb, but if already ground lamb is your only option, go ahead and use it, but mix in about 1/2 cup crisco or other solid shortening with lamb).
  • 4 so, combine lamb, garlic, uncooked rice, and paprika. add enough hot water to make mixture workable, but not mushy.
  • 5 now for your cabbage leaves, lay spine side up on cutting board, and with very sharp knife, trim the spine to make it thinner. start at the top, in the leaf, and trim very gently until you get to the bottom where you can trim more deeply, to get a uniform thickness. be careful not to puncture leaf or trim too deeply. this step makes the leaves so much easier to roll. flip leaves over so that the â€Å“cupâ€? side is up.
  • 6 once your leaves are ready to roll, place a good 1/2 cup of lamb mixture in your hand and shape into an oblong roll, about 1-1/2 inch thick and 3-4 inches long. place this in center of cabbage leaf and make the roll, folding bottom up, then sides in, then roll to top. (kinda like a burrito) continue till all filling and leaves are used.
  • 7 coarsely chop your remaining cabbage.
  • 8 preheat oven to 350.
  • 9 in bottom of roasting pan, place chopped cabbage and sauerkraut and mix together well. lay your ham hocks all around, evenly distributed, and kinda poke them down into kraut and cabbage mixture.
  • 10 now you place your cabbage rolls on top of all. stagger placement so that the rolls aren’t directly on top of one another.
  • 11 pour hot water over the whole thing, just to barely cover.
  • 12 put cover on roaster and bake at 350 for 2-1/2 to 3 hours until your rolls are quite firm.
  • 13 to serve, place some kraut cabbage mixture on plate, top with cabbage rolls, usually about 3 per serving, and top with sour cream to taste.
  • 14 note: you may want to have a 3rd head of cabbage on hand, just in case you can’t get enough leaves off of two to use all your filling.

Greek Bean Soup

  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrot, chopped

  • 1/2 teaspoon dried oregano, crushed
  • 1/8 teaspoon pepper
  • 2 (15 ounce) cans cannellini beans or 2 (15 ounce) cans great northern beans or 2 (15 ounce) cans navy beans, drained
  • 2 cups cabbage, coarsely chopped
  • 2 tablespoons lemon juice
  • 1/4 cup feta cheese, crumbled
  • 2 plum tomatoes, chopped
  • 2 tablespoons fresh parsley, chopped

  • 1 in a large sauce pan saute onions, celery and carrots in oil over medium heat for 5 minutes.
  • 2 add broth, garlic, oregano and pepper and bring to a boil, reduce heat and simmer 15 minutes.
  • 3 add beans and cabbage, and simmer 5 minutes.
  • 4 add lemon juice and simmer 5 minutes.
  • 5 ladle into individual soup bowls and top with cheese, tomato and parsley.

Lamb Gyoza

  • 1/3 cup cabbage, chopped and boiled
  • 1/4 cup carrot, shredded
  • 2 tablespoons green onions, chopped
  • 1/2 lb ground lamb, cooked
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 teaspoons soy sauce
  • 1/2 teaspoon fresh garlic, grated
  • 1/2 teaspoon fresh ginger, grated
  • 20 gyoza skins
  • 2 tablespoons vegetable oil
  • 1/4 cup water

Recipe

  • 1 combine all filling ingredients in a bowl and mix well by hand.
  • 2 place a teaspoonful of filling in a wrapper and put water along the edge of the wrapper. make a semicircle, gathering the front side of the wrapper and sealing the top.
  • 3 heat oil in a frying pan. put gyoza in the pan and fry on high heat for a min until the bottoms become brown. add 1/4 cup water in the pan. cover the pan with a lid and steam the gyoza for a few minutes on low heat.
  • 4 serve warm with gyoza sauce. can be found in asian food stores.

Sauteed Savoy Cabbage And Pears

  • 3 tablespoons butter, divided
  • 1 savoy cabbage, shredded (or finely chopped)
  • 2 bosc pears, peeled, cored and thinly sliced
  • 1/2 teaspoon sugar

  • 1/4 teaspoon pepper (to taste)

Recipe

  • 1 in a large skillet over medium heat, melt 2 tbsp of the butter; add the shredded cabbage and toss to coat with the butter. cover and cook over low heat for 10 minutes or until it is crisp-tender.
  • 2 while the cabbage is cooking, in a seperate skillet, over med-high heat, melt the remaining 1 tbsp butter;.
  • 3 add the thinly sliced pears and sugar. cook for 1-2 minutes.
  • 4 stir the pears into the cabbage skillet. cook over medium low heat for about 1-2 minutes. season with salt and pepper.

  • 1 in a stockpot, boil lamb and chicken breast in 4 cups of water. when tender, remove from pot and slice into small pieces, about 1/2-inch strips.
  • 2 reserve 3 cups of broth.
  • 3 in a frying pan, heat oil and saute garlic until brown. add onion. cook until transparent. season with salt. stir in lamb, chicken, shrimp, and pepper.
  • 4 simmer for 20 minutes. add reserved broth and vegetables.
  • 5 season with soy sauce and sesame oil.
  • 6 add noodles and cook until done. season with salt and pepper to taste. top with scallions.

Slow-roasted Salmon With Cabbage, Bacon & Dill

  • 1 head savoy cabbage (3/4 head regular green cabbage can be substituted)
  • 6 slices bacon, cut into 6 to 8 pieces each
  • 1 onion, cut into small dice
  • 1 cup water (plus additional if needed)
  • 24 ounces salmon fillets, skin removed
  • 1 teaspoon chopped fresh dill (plus additional for garnish)
  • 4 tablespoons extra virgin olive oil (plus additional for drizzling over finished dish)
  • 4 teaspoons butter
  • 1 lemon, juice of
  • salt and pepper

Recipe

  • 1 halve the cabbage lengthwise, cut out the core, then remove the leaves and slice them into 2-1/2-inch squares.
  • 2 preheat the oven to 250°f.
  • 3 place the bacon in a medium sauce pot over medium heat. render the bacon until cooked but not crispy.
  • 4 you should have approximately 2 ounces (4 tablespoons) fat; if you have more, discard the excess.
  • 5 add the onion and sauté for 1 minute.
  • 6 add the cabbage and water and let simmer uncovered until the cabbage is tender, about 15 minutes.
  • 7 if all the water evaporates during cooking, add more as needed until the cabbage is very tender.
  • 8 meanwhile, place the salmon fillets on a nonstick sheet pan.
  • 9 drizzle 1 tablespoon of the olive oil over each fillet.
  • 10 season with salt, pepper, and half the dill. top each fillet with a teaspoon of butter and place in the oven.
  • 11 cook 15 to 18 minutes for medium rare, 21 to 24 minutes for medium (depending on the thickness of the fish), and if you cook it any longer than that, i can't be held responsible.
  • 12 when the cabbage is meltingly soft and tender, season with salt, pepper, and the rest of the dill.
  • 13 keep warm while the salmon finishes cooking.
  • 14 remove the salmon from the oven and drizzle with the lemon juice.

Swedish Christmas Cabbage

  • 1 -in a large bowl, combine the ground beef with all of the ingredients, except for the cabbage, tomato soup and reserved diced tomato juice.

  • 3 -remove the core from the cabbage.
  • 4 steam the cabbage over high heat in a large pot to accomodate your cabbage with a about an inch of lightly salted water.
  • 5 i like to rotate my cabbage head so it is steamed evenly.
  • 6 -gently peel off the leaves and cut out the thick "veins" to aid in rolling.

  • 10 pour the tomato soup on top of the rolls.
  • 11 put the remaining drained sauerkraut on top of the rolls.
  • 12 pour v-8 juice over all.
  • 13 cover with foil and bake for 90 minutes in a 350 degree oven.

  • 2 remove from heat, add salad dressing and food coloring (if using), stir until well blended; stir in cabbage, carrots and celery.
  • 3 cut part of the green pepper into rings and reserve for later use.
  • 4 chop remaining green pepper and stir into salad.
  • 5 pour into an oiled 6-cup mold; refrigerate until firm, about 4 hours.
  • 6 to serve, unmold onto lettuce leaves and garnish with green pepper rings.
