Stuffed Cabbage Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 lb stew meat
  • 1 (16 ounce) package coleslaw mix
  • 1 large onion, chopped
  • 2 (15 ounce) cans beef broth
  • 1 (28 ounce) can crushed tomato puree
  • 1 cup water
  • 1/2 cup packed light brown sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/3 cup rice

Recipe

  • 1 heat oil in 6 qt.
  • 2 pot over medium heat.
  • 3 add beef, saute until browned.
  • 4 add coleslaw mix and onion.
  • 5 cook covered 4 minutes, stirring after 2.
  • 6 add tomatoes, beef broth, water, brown sugar.
  • 7 lemon juice and salt.
  • 8 bring to boil.
  • 9 add rice, reduce heat to medium-low.
  • 10 simmer, covered, 45 minutes or until beef and rice are tender.
