Garden Vegetable Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2/3 cup sliced carrot
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups fat-free broth (beef, chicken or vegetable)
  • 1 1/2 cups diced green cabbage
  • 1/2 cup green beans
  • 1 tablespoon tomato paste
  • 1 large tomato, diced
  • 2 stalks celery, diced
  • 1/2 teaspoon dried basil
  • 1/3 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/2 cup diced zucchini

Recipe

  • 1 in large saucepan that has be sprayed with pam, saute the carrot, onion, garlic and celery about 5 minutes.
  • 2 add broth.
  • 3 add cabbage, beans tomato paste, tomato, basil, oregano and salt.
  • 4 bring to a boil.
