Irish Cabbage Quinoa Soup

Ingredients
- Servings: 6
- 4 tablespoons butter, divided
- 1 1/2 cups chopped onions
- 1 1/2 teaspoons caraway seeds, crushed
- 1/2 teaspoon black pepper
- 3/4 cup quinoa, rinsed
- 6 cups chicken broth
- 6 cups savoy cabbage, thinly sliced
- 4 ounces canadian bacon, chopped
- salt and pepper
Recipe
- 1 in large pot, melt half the butter. add onions, caraway seeds and pepper. cook 5-6 minutes until onions are softened.
- 2 stir in quinoa and broth; bring to a boil. reduce heat to low and simmer for 15 minutes.
- 3 stir in cabbage, cover and simmer, stirring, 4-5 minutes until cabbage is wilted and quinoa is tender.
- 4 transfer 1/3 of soup to food processor and puree until smooth. return to soup pot and stir in bacon. season to taste with salt and pepper.
