Irish Cabbage Quinoa Soup

Ingredients

  • Servings: 6
  • 4 tablespoons butter, divided
  • 1 1/2 cups chopped onions
  • 1 1/2 teaspoons caraway seeds, crushed
  • 1/2 teaspoon black pepper
  • 3/4 cup quinoa, rinsed
  • 6 cups chicken broth
  • 6 cups savoy cabbage, thinly sliced
  • 4 ounces canadian bacon, chopped
  • salt and pepper

Recipe

  • 1 in large pot, melt half the butter. add onions, caraway seeds and pepper. cook 5-6 minutes until onions are softened.
  • 2 stir in quinoa and broth; bring to a boil. reduce heat to low and simmer for 15 minutes.
  • 3 stir in cabbage, cover and simmer, stirring, 4-5 minutes until cabbage is wilted and quinoa is tender.
  • 4 transfer 1/3 of soup to food processor and puree until smooth. return to soup pot and stir in bacon. season to taste with salt and pepper.
