Frugal Gourmet Red Cabbage

Ingredients

  • Servings: 5-6
  • 1 lb red cabbage, cored and shredded
  • 1 1/2 cups beef stock
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup cider vinegar
  • 4 tablespoons butter
  • 1/4 teaspoon black pepper, freshly ground
  • 1 pinch salt

Recipe

  • combine all the ingredients, except the salt, in a 10- to 12-quart stainless-steel pot.
  • bring to a boil, stir, cover, and simmer over low heat, stirring occasionally, 1 hour and 15 minutes.
  • add salt to taste.
