Broke Guy's Chili-garlic Noodle Bowl

Ingredients

  • Servings: 4
  • 8 ounces soba noodles or 8 ounces spaghetti
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/4 cup vegetable oil, divided
  • 1 tablespoon chili-garlic sauce
  • 1 lb medium shrimp, peeled deveined (optional)
  • 2 cups cabbage, shredded (optional)
  • 2 cups frozen peas, thawed (optional)
  • 4 carrots, thinly sliced

Recipe

  • 1 cook the noodles according to the package directions.
  • 2 toss them with the lime juice, soy sauce, sesame oil, chili-garlic sauce and 2 tablespoons of the vegetable oil.
  • 3 if you are using the optional shrimp, heat the remaining 2 tablespoons of vegetable oil in a large skillet over medium-high heat. add the shrimp and cook, tossing frequently, until opaque throughout (2 to 3 minutes).
  • 4 divide the noodles among 4 bowls and top with the shrimp. add the cabbage, peas and carrots, dividing evenly.
