Broke Guy's Veggie Brown Rice Stir-fry

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups brown rice
  • 2 tablespoons vegetable oil
  • 8 ounces mushrooms, sliced
  • 2 garlic cloves, sliced
  • 1/2 small head cabbage, sliced
  • 3 tablespoons oyster sauce
  • 2 tablespoons rice vinegar
  • 1 (11 ounce) package frozen spinach, thawed
  • kosher salt, to taste

Recipe

  • 1 cook the rice according to the package directions.
  • 2 while the rice is cooking, heat the oil in a large skillet over medium-high heat. add the mushrooms and cook until brown (4 to 6 minutes). add the garlic and cook until fragrant (30 seconds).
  • 3 add the cabbage and saute until wilted (2 to 3 minutes). add the oyster sauce and rice vinegar. stir-fry tossing frequently until liquid is gone (2 to 3 minutes). add the spinach and a pinch of salt. cook until partly wilted (1 to 2 minutes).
  • 4 serve the mushrooms and spinach over the rice.
