Garden Vegetable Soup Weight Watchers 0 Points Per 1 Cup Servi

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2/3 cup carrot, sliced
  • 1/2 cup diced onion
  • 2 garlic cloves
  • 3 cups reduced-sodium fat-free chicken broth
  • 1/2 cup green beans
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/2 cup fresh zucchini, diced

Recipe

  • 1 spray a large saucepan with nonstick cooking spray, heat.
  • 2 saute' the carrot, onion, garlic over low heat until softened, about 5 minutes.
  • 3 add broth, beans, tomato paste, basil, oregano, and salt; bring to a boil.
  • 4 reduce heat, simmer, covered, about 15 minutes or until beans are tender.
  • 5 stir in the zucchini and heat for 3-4 minutes. serve hot.
  • 6 you can add in 1 1/2 cups diced green cabbage also, i personally do not like cabbage to i omit that ingredient.
