Ingredients
- 2/3 cup carrot, sliced
- 1/2 cup diced onion
- 2 garlic cloves
- 3 cups reduced-sodium fat-free chicken broth
- 1/2 cup green beans
- 1 tablespoon tomato paste
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/2 cup fresh zucchini, diced
Recipe
- 1 spray a large saucepan with nonstick cooking spray, heat.
- 2 saute' the carrot, onion, garlic over low heat until softened, about 5 minutes.
- 3 add broth, beans, tomato paste, basil, oregano, and salt; bring to a boil.
- 4 reduce heat, simmer, covered, about 15 minutes or until beans are tender.
- 5 stir in the zucchini and heat for 3-4 minutes. serve hot.
- 6 you can add in 1 1/2 cups diced green cabbage also, i personally do not like cabbage to i omit that ingredient.
