Crispy Ginger Slaw

Ingredients

- 2 cups napa cabbage, shredded (or regular green cabage)
- 1 cup carrot, shredded
- 1 cup snow peas, slivered
- 2 tablespoons cilantro (optional)
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 3 tablespoons sesame oil
- 3 tablespoons vegetable oil
- 2 tablespoons sugar
- 2 tablespoons mirin
- 1 garlic clove, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon lime juice (fresh is best)
- 1/4 teaspoon cayenne pepper
Recipe
- 1 make the dressing.
- 2 combine all of the dressing ingredients in a small bowl. cover and refrigerate for several hours, or overnight.
- 3 in a serving bowl, combine cabbage, carrots, and snow peas.
- 4 add dressing and toss to coat all of the vegetables.
- 5 top with cilantro (if using).
- 6 serve immediately!
