Chicken And Blue Cheese Slaw

Ingredients

  • 2 cups chopped chopped skinless boneless rotisserie chicken breasts
  • 2 cups red seedless grapes, halved
  • 1 cup shredded carrot
  • 1/2 cup thinly sliced red onion
  • 1 (10 ounce) package shredded cabbage
  • 1/4 cup rice vinegar
  • 1/4 cup reduced-sodium fat-free chicken broth
  • 1/4 cup thawed orange juice concentrate
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper
  • 3 tablespoons crumbled blue cheese
  • 2 tablespoons coarsely chopped walnuts

Recipe

  • 1 to prepare salad, place the first 5 ingredients in a large bowl, and toss gently to combine.
  • 2 to prepare dressing, combine vinegar, broth, juice concentrate, oil, salt, and pepper, stirring with a whisk. drizzle over salad, tossing to coat. sprinkle with cheese and walnuts, and toss gently to combine.
