Shredded Beets With Creme Fraiche And Mint

Ingredients
- Servings: 5
- 2 cups raw young baby red beets, shredded
- 3/4 cup shredded red cabbage
- 1/3 cup red onion, sliced into thin crescents
- 1 tablespoon capers, undrained
- 1/4 cup creme fraiche (this works ( homemade creme fraiche)
- fresh mint leaves (fresh *only*!)
- salad greens (optional)
Recipe
- 1 stir together the beets, cabbage, onion and capers in a bowl.
- 2 *divide and arrange on salad plates.
- 3 top each serving with a drizzle of creme fraiche and a few mint leaves.
- 4 *note: if desired, serve the beet mixture on a bed of greens of your choice: mixed, arugula, etc.
