Savoy Cabbage With Peppers

Ingredients

- 2 teaspoons canola oil
- 1/2 teaspoon caraway seed
- 1/2 teaspoon mustard seeds
- 4 cups thinly sliced savoy cabbage
- 1 jalapeno pepper, seeded and finely chopped
- 1/4 cup reduced-sodium vegetable broth or 1/4 cup low sodium chicken broth
- 1/4 cup chopped bottled roasted red pepper
- salt
- fresh ground pepper
- crushed red pepper flakes (optional)
Recipe
- 1 heat oil in a large nonstick skillet over medium heat.
- 2 add caraway and mustard seeds and cook, stirring, for 1 minute.
- 3 stir in cabbage and jalapenos and cook, stirring, for 1 minute.
- 4 stir in broth and cover the pan tightly.
- 5 reduce heat to low and simmer until the cabbage is tender, 5 to 6 minutes.
- 6 stir in red peppers and season with salt,pepper, and crushed red pepper flakes (if using).
