Savoy Cabbage With Peppers

Ingredients

  • Servings: 4
  • 2 teaspoons canola oil
  • 1/2 teaspoon caraway seed
  • 1/2 teaspoon mustard seeds
  • 4 cups thinly sliced savoy cabbage
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 cup reduced-sodium vegetable broth or 1/4 cup low sodium chicken broth
  • 1/4 cup chopped bottled roasted red pepper
  • salt
  • fresh ground pepper
  • crushed red pepper flakes (optional)

Recipe

  • 1 heat oil in a large nonstick skillet over medium heat.
  • 2 add caraway and mustard seeds and cook, stirring, for 1 minute.
  • 3 stir in cabbage and jalapenos and cook, stirring, for 1 minute.
  • 4 stir in broth and cover the pan tightly.
  • 5 reduce heat to low and simmer until the cabbage is tender, 5 to 6 minutes.
  • 6 stir in red peppers and season with salt,pepper, and crushed red pepper flakes (if using).
  • 7 *make ahead tip: cover and refrigerate for up to 8 hours, then reheat gently on the stovetop or in the microwave before serving.
