Ukrainian Red Cabbage - Kapusta

Ingredients

  • Servings: 10
  • 1/4 cup unsalted butter
  • 2 large granny smith apples, cored and chopped
  • 1 large onion, thinly sliced
  • 2 lbs red cabbage, shredded
  • 1/4 cup packed golden brown sugar
  • 2 tablespoons cider vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/8 teaspoon ground cloves
  • 1/3 cup chicken stock
  • 2 tablespoons black currant jam
  • salt and pepper

Recipe

  • 1 melt the butter in a large saucepan over medium-high heat. add the apples and the onion and sauté until the onion is tender and translucent, approximately 8 minutes.
  • 2 stir in cabbage and stir until wilted, approximately 8 minutes. stir in the sugar, vinegar ,salt, cinnamon, allspice, and cloves. cover and cook until the cabbage is tender, stirring occasionally, aproximately 10 minutes.
  • 3 add the stock and jam and continue to cook uncovered for 5 minutes longer. season with salt and pepper and serve. delicious!
