New England Vegetable Chowder

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1/4 cup butter
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 cup celery, diced
  • 1 cup carrot, diced
  • 1 1/2 cups corn
  • 1 cup green cabbage, grated
  • 1 cup peas
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons parsley, chopped
  • 4 cups milk
  • american cheese, grated

Recipe

  • 1 melt butter in a heavy kettle.
  • 2 add onion, green pepper and celery.
  • 3 saute until limp.
  • 4 add the rest of the vegetables and seasonings.
  • 5 add enough water to cover.
  • 6 cook 1 hour.
  • 7 stir in milk and parsley.
  • 8 ladle into soup bowls.
  • 9 sprinkle with cheese.
