New England Vegetable Chowder

Ingredients
- Servings: 4
- 1/4 cup butter
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 cup celery, diced
- 1 cup carrot, diced
- 1 1/2 cups corn
- 1 cup green cabbage, grated
- 1 cup peas
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons parsley, chopped
- 4 cups milk
- american cheese, grated
Recipe
- 1 melt butter in a heavy kettle.
- 2 add onion, green pepper and celery.
- 3 saute until limp.
- 4 add the rest of the vegetables and seasonings.
- 5 add enough water to cover.
- 6 cook 1 hour.
- 7 stir in milk and parsley.
- 8 ladle into soup bowls.
- 9 sprinkle with cheese.
