Cabbage Casserole

Ingredients

- 1 small head green cabbage, cored and chopped
- 3 tablespoons butter
- 1 small onion, chopped
- 2 garlic cloves, crushed
- 3 tablespoons flour
- 2 cups low-fat milk
- 1/2 teaspoon mustard powder
- 1/4-1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese, sharp preferred
- 2 tablespoons butter, melted
- 1 cup crushed cracker crumb
- 1/4 teaspoon paprika
Recipe
- 1 preheat oven to 350. lightly grease a 13 x 9 baking dish; set aside.
- 2 cook cabbage in boiling salted water until tender. drain well; keep hot and set aside.
- 3 meanwhile, melt the 3 tbsp butter in a saucepan. saute the onion and garlic til soft but not browned.
- 4 stir the flour into the butter/onions/garlic until smooth.
- 5 gradually stir in the milk and keep stirring until mixture thickens.
- 6 add the mustard powder, salt, pepper and cheese. stir until cheese is melted and sauce is smooth.
- 7 mix the cooked cabbage with the sauce and pour into the prepared baking dish.
- 8 mix the melted butter and cracker crumbs and sprinkle over top.
- 9 sprinkle with paprika.
- 10 bake at 350 for 25-30 minutes.
