Lamb Tenderloin With Cabbage And Bacon

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 tablespoons vegetable oil
  • 600 g lamb tenderloin, trimmed
  • 2 slices streaky bacon, cut into strips
  • 1 small savoy cabbage, finely sliced
  • 2 apples, sliced
  • 1 tablespoon butter
  • salt
  • ground black pepper

Recipe

  • 1 heat half of the oil in a frying pan over medium heat and brown the lamb on all sides.
  • 2 transfer to a baking dish and roast for 40 minutes in a 350 degree f oven. the lamb will be cooked through but still nice and juicy.
  • 3 when done, transfer to a cutting board and let rest until ready to slice.
  • 4 meanwhile, in a separate pan, heat the remaining oil, add the bacon and cook for 4 minutes.
  • 5 add the cabbage and apples and cook until soft.
  • 6 stir in the butter and season to taste.
  • 7 divide the cabbage between four plates and top each with the lamb.
