Hunters Stew (bigos)

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 50 g butter
  • 2 onions, peeled and chopped
  • 1 jar sauerkraut
  • 1 can tomato, peeled
  • 1 small cabbage
  • 300 ml strong beef stock
  • 250 g smoked sausage
  • 5 -6 lamb ribs
  • salt and pepper

Recipe

  • 1 melt butter in a saucepan and fry the onions until golden.
  • 2 rinse the sauerkraut in cold water, drain thoroughly and mix with the onions.
  • 3 add the tomatoes.
  • 4 chop the cabbage finely and mix in.
  • 5 add the stock, stirring well, and then the lamb ribs.
  • 6 slice the sausage and add into the stew.
  • 7 allow to simmer on low heat for one hour.
  • 8 season to taste.
  • 9 remove from heat and leave covered for 24 hours.
  • 10 refrigerate and reheat before serving.
