Supu Ya Kuku, Chicken Soup Of Zanzibar

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 1/2 cup onion, finely chopped
  • 1/2 cup cabbage, finely chopped
  • 1 small tomato, finely diced
  • 1 stalk celery, finely chopped in
  • 2 ounces butter or 2 ounces margarine, until soft but not brown
  • 5 lbs fowl, cut in quarters (fat hen)
  • 2 quarts clear water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 sautee first 5 ingredients.
  • 2 add remaining ingredients.
  • 3 simmer gently for 1 hour or until meat is tender.
  • 4 remove the fowl.
  • 5 cut 1 cup of the meat in 1/2 inch cubes and add to the soup.
  • 6 correct the seasonings to your taste.
