Special Chunky Coleslaw

Ingredients

  • Servings: 4
  • 1 large carrot
  • 1 onion (red or , i prefer red because it adds colour)
  • 1/2 of a small cabbage
  • 2 sticks celery
  • salt
  • pepper
  • 3 tablespoons mayonnaise (use more or less mayonnaise to suit your taste)

Recipe

  • 1 wash the vegetables.
  • 2 peel the whole carrot with a speed peeler, making nice long wide shavings.
  • 3 chop the top and bottom off the celery, cut lengthways into two strips,
  • 4 then cut these into thin batons.
  • 5 cut the onion into thin rings, cut the rings in half.
  • 6 slice the cabbage into thin long strips.
  • 7 place all the vegetables into a large bowl and mix in the mayonnaise, until the coleslaw looks creamy and the vegetables are fairly evenly covered
  • 8 add salt and pepper to your liking.
