Lima Bean And Cabbage Soup

Total Time: 1 hr 30 mins Preparation Time: 15 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 10
  • 2 cups dried lima beans, soaked in water overnight
  • 1 (16 ounce) package coleslaw mix (shredded cabbage and carrots)
  • 1 onion, chopped
  • 2 cloves garlic, minced,to taste
  • 1/2 cup wine vinegar or 1/2 cup cider vinegar
  • 1 1/2 quarts water or 1 1/2 quarts stock
  • 1 tablespoon chicken bouillon granule
  • 2 teaspoons salt-free lemon pepper
  • 2 teaspoons dried italian herb seasoning
  • 10 ounces cooked pasta (optional)

Recipe

  • 1 in the morning drain beans, add new water to cover beans, and cook for 45 minutes.
  • 2 add all the other ingrendents, mix and and simmer for an additional 30 minutes.
