Oriental Coleslaw

Ingredients
- Servings: 6
- 4 cups napa cabbage or 4 cups chinese cabbage
- 1 (8 ounce) can crushed pineapple, drained
- 1 (8 ounce) can water chestnuts, drained and sliced
- 1 cup cilantro or 1 cup parsley, chopped
- 1/4 cup scallion, sliced
- 1/4 cup low-fat mayonnaise
- 1 tablespoon mustard
- 1 teaspoon ginger, grated
Recipe
- 1 combine first five ingredients.
- 2 cover and chill in refrigerator at least 1 hour.
- 3 combine next three ingredients.
- 4 cover and chill in refrigerator at least 1 hour.
- 5 toss dressing with cabbage mixture and serve.
