Littlemafia's Romanian Beef Sour Soup

Ingredients

- 500 g beef
- 1 -2 onion
- 2 carrots
- 1 leek
- 1 parsnip
- 1 parsley root
- 1/2 celery root
- 2 potatoes
- 2 tomatoes
- 1 -2 tablespoon tomato paste
- 2 liters water
- salt
- fresh parsley leaves
- lovage, leaves
- 500 ml sauerkraut juice
- vermicelli
Recipe
- 1 bring to boil the beef cut into medium sized pieces together with water and salt.
- 2 remove the scum several times, then add some salt.
- 3 clean and chop or grate the veggies and add them to the soup.
- 4 later add the tomatoes . let it boil for another 10 - 15 minute.
- 5 separately boil the pickled cabbage juice then add it to beef soup.
- 6 add the noodles.
- 7 boil the sour soup for another few minutes, add the tomato paste, put salt and lemon juice to taste.
- 8 when is cooked, add parsley and lovage leaves.
