Littlemafia's Romanian Beef Sour Soup

Ingredients

  • Servings: 8
  • 500 g beef
  • 1 -2 onion
  • 2 carrots
  • 1 leek
  • 1 parsnip
  • 1 parsley root
  • 1/2 celery root
  • 2 potatoes
  • 2 tomatoes
  • 1 -2 tablespoon tomato paste
  • 2 liters water
  • salt
  • fresh parsley leaves
  • lovage, leaves
  • 500 ml sauerkraut juice
  • vermicelli

Recipe

  • 1 bring to boil the beef cut into medium sized pieces together with water and salt.
  • 2 remove the scum several times, then add some salt.
  • 3 clean and chop or grate the veggies and add them to the soup.
  • 4 later add the tomatoes . let it boil for another 10 - 15 minute.
  • 5 separately boil the pickled cabbage juice then add it to beef soup.
