Sheila's Cabbage Soup

Ingredients

  • Servings: 4
  • 2 1/2-3 lbs beef shank
  • 1 large onion, chopped
  • 2 -3 tablespoons butter
  • 1 bay leaf
  • 1 tablespoon salt
  • 1/4 teaspoon pepper
  • 4 cups cabbage, shredded
  • 1 1/2 cups leeks, chopped ( part only)
  • 1 1/2 cups celery, diced
  • 1 cup carrot, grated
  • 10 cups water

Recipe

  • 1 simmer beef shanks in water (see note)with bay leaf, salt and pepper for 2 1/2 to 3 hours. at the same time brown onion in fry pan, then simmer along with meat.
  • 2 add remaining ingredients and simmer 15-30 minutes longer.
