Minestrone

Total Time: 10 hrs 10 mins Preparation Time: 10 mins Cook Time: 10 hrs

Ingredients

  • Servings: 8
  • 3 cups water
  • 1 lb beef stew meat
  • 1 cup chopped onion
  • 1 cup sliced carrot
  • 1 cup sliced celery
  • 1 (14 ounce) can italian tomatoes
  • 2 teaspoons salt
  • 1/2 cup shredded cabbage
  • 1 tablespoon basil
  • 1 teaspoon minced garlic
  • 1 teaspoon oregano
  • 1 (16 ounce) can garbanzo beans
  • 10 ounces frozen mixed vegetables
  • 1 cup sliced zucchini

Recipe

  • 1 place water and meat in slow cooker. add remaining ingredients except for frozen vegetables and zucchini.
  • 2 cover and cook on low for 10 hours. add vegetables and zucchini during last hour of cooking.
  • 3 remove from slow cooker and allow to cool. place in freezer bag. label and freeze.
  • 4 to serve: thaw. heat until hot and bubbly. serve topped with parmesan cheese.
