Low Carb Veggie Beef Soup

Total Time: 5 hrs 20 mins Preparation Time: 20 mins Cook Time: 5 hrs

Ingredients

  • Servings: 10
  • 1 1/2 lbs lean ground beef
  • 1 (8 ounce) bag frozen chopped onions
  • 1 (28 ounce) can diced tomatoes (drained)
  • 1 (28 ounce) can cut green beans (drained)
  • 1 cup mild salsa
  • 8 ounces fresh mushrooms (sliced)
  • 4 celery ribs (chopped)
  • 1/2 head cabbage (chopped)
  • 3.5 (14 ounce) cans beef broth
  • salt and pepper
  • garlic powder
  • all purpose greek seasoning

Recipe

  • 1 brown meat with onions in skillet. sprinkle meat with garlic powder.
  • 2 put all other ingredients in a large crock pot except salt and pepper.
  • 3 once meat has browned, add meat to crock pot and stir well. add salt and pepper to taste.
  • 4 turn crock pot on high.
  • 5 i let mine cook on high for about 5-6 hours.
  • 6 i add shredded cedar cheese to mine when serving.
