Kuhnhenn German Red Cabbage (sweet - Sour_)

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 medium shredded red cabbage (about 1.5#)
  • 8 slices bacon (apple wood smoked thick cut)
  • 1/4 cup light brown sugar (packed)
  • 2 tablespoons flour (all purpose)
  • 1/2 cup water
  • 1/4 cup vinegar (apple cider)
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 small onion

Recipe

  • 1 steam the cabbage in a large pot covered with 1/2" to 1" of water and 2 tbs of vinegar(this is makes the cabbage retain it's color) 10 to 20 min to desired tenderness. drain.
  • 2 fry bacon until crisp. remove and drain retain 1/4 cup of bacon drippings.
  • 3 sauce -in a skillet add bacon drippings, heat , strr in brown sugar and flour. dissolve until there are no lumps.
  • 4 now add water, vinegar,salt,pepper and onion. cook 5 min or until the mixture thickens over medium heat.
  • 5 crumple bacon
  • 6 mix the bacon and sauce to the hot drained cabbage.
  • 7 we prefer to serve warm but not hot.
