Hercules' Soup

Ingredients
- 1 lb ground sausage
- 3 stalks celery
- 1 small onion, sliced
- 2 cups of sliced cabbage
- 1 baking potato
- 1 turnip
- cannileni beans
- frozen spinach
- 1 cup tortellini
- 2 (14 1/2 ounce) cans chopped tomatoes with juice
- 3 1/2 cups chicken broth
Recipe
- 1 brown the sausage in a dutch oven, stirring frequently to prevent burning.
- 2 take the sausage out with a slotted spoon.
- 3 sautee the cabbage, onion and celery in the grease from the sausage. about 15 minutes, until cooked down.
- 4 add the potato, turnip, tomatoes, chicken broth and sausage.
- 5 bring to a boil and let simmer for 20-30 minutes.
- 6 add cooked tortillini and simmer for another 10-15 mintues.
- 7 once tortillini and potatoes are soft and ready to eat, serve in bowls and top with cheese.
