Hercules' Soup

Total Time: 1 hr 40 mins Preparation Time: 40 mins Cook Time: 1 hr

Ingredients

  • 1 lb ground sausage
  • 3 stalks celery
  • 1 small onion, sliced
  • 2 cups of sliced cabbage
  • 1 baking potato
  • 1 turnip
  • cannileni beans
  • frozen spinach
  • 1 cup tortellini
  • 2 (14 1/2 ounce) cans chopped tomatoes with juice
  • 3 1/2 cups chicken broth

Recipe

  • 1 brown the sausage in a dutch oven, stirring frequently to prevent burning.
  • 2 take the sausage out with a slotted spoon.
  • 3 sautee the cabbage, onion and celery in the grease from the sausage. about 15 minutes, until cooked down.
  • 4 add the potato, turnip, tomatoes, chicken broth and sausage.
  • 5 bring to a boil and let simmer for 20-30 minutes.
  • 6 add cooked tortillini and simmer for another 10-15 mintues.
  • 7 once tortillini and potatoes are soft and ready to eat, serve in bowls and top with cheese.
