Ground Beef & Cabbage Stew

Ingredients
- Servings: 4
- 2 teaspoons olive oil
- 1 medium red onion, chopped
- 1/2 medium cabbage, cored and chopped
- 14 ounces stewed tomatoes
- 6 small red potatoes, fourthed
- 2 medium carrots, chopped
- 1 red peppers or 1 yellow peppers or 1 green pepper
- 1/2 teaspoon thyme
- 1 cup vegetable broth (i sometimes use beef broth)
- 1 cup corn
- 1 cup green beans
- 1/2 lb lean ground beef
- 1 teaspoon chili powder
- 2 teaspoons cumin
- salt and pepper
Recipe
- 1 brown ground beef and drain;set aside.
- 2 heat olive oil in skillet and add onion and cook 2-3 minutes.
- 3 add cabbage, tomatoes, potatoes, carrots, bell pepper, thyme.
- 4 mix well.
- 5 add broth.
- 6 heat to boiling; reduce heat.
- 7 cover and cook 20 minutes.
- 8 stir in corn and beans.
- 9 cover and cook 15 minutes.
