Ground Beef & Cabbage Stew

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 2 teaspoons olive oil
  • 1 medium red onion, chopped
  • 1/2 medium cabbage, cored and chopped
  • 14 ounces stewed tomatoes
  • 6 small red potatoes, fourthed
  • 2 medium carrots, chopped
  • 1 red peppers or 1 yellow peppers or 1 green pepper
  • 1/2 teaspoon thyme
  • 1 cup vegetable broth (i sometimes use beef broth)
  • 1 cup corn
  • 1 cup green beans
  • 1/2 lb lean ground beef
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • salt and pepper

Recipe

  • 1 brown ground beef and drain;set aside.
  • 2 heat olive oil in skillet and add onion and cook 2-3 minutes.
  • 3 add cabbage, tomatoes, potatoes, carrots, bell pepper, thyme.
  • 4 mix well.
  • 5 add broth.
  • 6 heat to boiling; reduce heat.
  • 7 cover and cook 20 minutes.
  • 8 stir in corn and beans.
  • 9 cover and cook 15 minutes.
