Garden Vegetable Soup

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2/3 cup carrot
  • 1/2 cup onion
  • 3 garlic cloves
  • 3 cups fat-free low-sodium chicken broth
  • 1/2 cup green cabbage
  • 1/2 cup green beans
  • 1 tablespoon tomato paste
  • 1/2 teaspoon basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/2 cup zucchini

Recipe

  • 1 spray large saucepan with pam.
  • 2 saute carrots, onion and garlic over low heat until softened (about 5 minutes).
  • 3 add broth, cabbage, beans, tomato paste, basil, orgeno and salt.
  • 4 bring to a boil.
  • 5 lower heat and simmer (covered about 15 minutes or until beans are tender).
  • 6 stir in zucchini and heat additional 3 to 4 minutes.
  • 7 serve hot.
