Garden Vegetable Soup

Ingredients
- 2/3 cup carrot
- 1/2 cup onion
- 3 garlic cloves
- 3 cups fat-free low-sodium chicken broth
- 1/2 cup green cabbage
- 1/2 cup green beans
- 1 tablespoon tomato paste
- 1/2 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon salt
- 1/2 cup zucchini
Recipe
- 1 spray large saucepan with pam.
- 2 saute carrots, onion and garlic over low heat until softened (about 5 minutes).
- 3 add broth, cabbage, beans, tomato paste, basil, orgeno and salt.
- 4 bring to a boil.
- 5 lower heat and simmer (covered about 15 minutes or until beans are tender).
- 6 stir in zucchini and heat additional 3 to 4 minutes.
- 7 serve hot.
