Double Cranberry Slaw

Ingredients

  • 1 small head cabbage, shredded
  • 4 -6 baby carrots, shredded
  • 1/4 small onion, shredded
  • 1 cup fresh cranberries, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts
  • 1/4 cup red wine vinegar
  • 3 tablespoons honey
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon fresh ground pepper (to taste)
  • splash of your favorite hot sauce, i used cholulas
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice

Recipe

  • 1 use a food processor to shred all the fresh veggies, or use a packaged mix.place in a bowl.
  • 2 pulse the dried cranberries & walnuts together in food processor a few times until ground but not a paste. add this to the next 7 ingedients (the dressing) and pour over the veggies. best if you let it sit in fridge several hours or overnight.
