red cabbage mango pistachio salad

Ingredients

  • Servings: 5
  • 1/2 large head red cabbage, shredded
  • 1 mango - peeled, seeded, and cut into wedges
  • 1/4 cup roasted, shelled pistachios
  • 1 tablespoon chopped fresh mint, or to taste (optional)
  • 2 tablespoons truffle oil
  • 1 tablespoon agave nectar
  • 1 tablespoon lime juice
  • 1 tablespoon vinegar
  • 1/2 teaspoon salt
  • 1 sprig fresh mint

    Preparation Time: 20 mins Ready Time: 20 mins

  • stir red cabbage, mango, pistachios, and 1 tablespoon mint together in a large salad bowl.
  • whisk truffle oil, agave nectar, lime juice, vinegar, and salt in a small bowl and pour dressing over salad; toss to combine. garnish with 1 sprig fresh mint.
