French Style Creamed Cabbage

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 head cabbage
  • salt and pepper
  • 1 tablespoon lard (or oil)
  • 1 garlic clove, chopped
  • 1 bouquet garni
  • 2/3 cup chicken stock
  • 3 tablespoons creme fraiche

Recipe

  • 1 wash the cabbage, remove outer leaves and slice (wash again if necessary).
  • 2 bring a large pan of water to the boil, add salt and cabbage and cook for 10 minutes.
  • 3 drain cabbage.
  • 4 heat the lard in a large pan, add the garlic making sure it doesn't brown.
  • 5 add the cabbage and bouquet garni.
  • 6 moisten with the stock and and season.
  • 7 cover and simmer for 45 minutes to 1 hour, checking occasionally to ensure there is some liquid at the bottom of the pan and adding more stock if necessary.
  • 8 remove the pan from the heat and add the creme fraiche, stir and serve immediately.
