Calendula Coleslaw

Ingredients

  • Servings: 4
  • 2 cups apples, unpeeled and chopped
  • 2 tablespoons tangerine peel, grated
  • 3 cups tangerines, peeled and segmented, seeded
  • 2 tablespoons green bell peppers, chopped
  • 5 cups cabbage, finely shredded
  • 12 calendula flowers, washed and dried
  • 1/3 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon mustard
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground pepper

Recipe

  • 1 combine apple, tangerine peel, tangerine segments and chopped green pepper with cabbage in a large bowl.
  • 2 remove petals from flowers and add petals to the salad.
  • 3 blend together remaining ingredients and pour over coleslaw.
  • 4 toss lightly to mix well.
  • 5 chill thoroughly.
