Calendula Coleslaw

Ingredients

- 2 cups apples, unpeeled and chopped
- 2 tablespoons tangerine peel, grated
- 3 cups tangerines, peeled and segmented, seeded
- 2 tablespoons green bell peppers, chopped
- 5 cups cabbage, finely shredded
- 12 calendula flowers, washed and dried
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon vinegar
- 2 tablespoons honey
- 1/2 teaspoon mustard
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/8 teaspoon ground pepper
Recipe
- 1 combine apple, tangerine peel, tangerine segments and chopped green pepper with cabbage in a large bowl.
- 2 remove petals from flowers and add petals to the salad.
- 3 blend together remaining ingredients and pour over coleslaw.
- 4 toss lightly to mix well.
- 5 chill thoroughly.
