Peanut Crunch Salad

Ingredients

  • Servings: 6
  • 4 cups shredded cabbage
  • 1 cup finely chopped celery
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 cup chopped green onion
  • 1/4 cup chopped green pepper
  • 1/2 cup chopped cucumber
  • 1 tablespoon butter
  • 1/2 cup coarsely chopped dry roasted peanuts
  • 2 tablespoons grated parmesan cheese

Recipe

  • 1 toss cabbage and celery together, and chill.
  • 2 combine sour cream, mayonnaise, salt, onion, green pepper and cucumber in a small bowl.
  • 3 chill.
  • 4 just before serving, melt butter in a small skillet, and add peanuts.
  • 5 heat until lightly browned.
  • 6 immediately stir in cheese.
  • 7 toss chilled vegetables with dressing, and sprinkle peanut mixture on top.
