Peanut Crunch Salad

Ingredients
- Servings: 6
- 4 cups shredded cabbage
- 1 cup finely chopped celery
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 cup chopped green onion
- 1/4 cup chopped green pepper
- 1/2 cup chopped cucumber
- 1 tablespoon butter
- 1/2 cup coarsely chopped dry roasted peanuts
- 2 tablespoons grated parmesan cheese
Recipe
- 1 toss cabbage and celery together, and chill.
- 2 combine sour cream, mayonnaise, salt, onion, green pepper and cucumber in a small bowl.
- 3 chill.
- 4 just before serving, melt butter in a small skillet, and add peanuts.
- 5 heat until lightly browned.
- 6 immediately stir in cheese.
- 7 toss chilled vegetables with dressing, and sprinkle peanut mixture on top.
