Pancit Bihon

Ingredients

- 1 (8 ounce) package pancit bihon noodles
- 1 cooked chicken breast, shredded (i boil chicken in some chicken broth)
- 2 cups chicken broth
- 3 leaves green cabbage (if you like more cabbage i suggest using 1/4 cabbage)
- 1 small onion, peeled and chopped
- 3 garlic cloves, minced
- 1/3 cup green onion, chopped
- 1 carrot, sliced into thin strips
- 2 tablespoons olive oil
- 3/4 cup diced celery
- 3 tablespoons soy sauce
- salt & pepper
- 1 lemon
Recipe
- 1 soak pancit bihon noodles in warm water to soften; approx 7-10 minutes. after soak time place on cutting board and cut into 1-2 inch pieces.
- 2 in large wok or pan saute garlic and onion (not green) in olive oil.
- 3 add chicken broth, shredded chicken and all vegetables until cooked. approx 20 minutes.
- 4 mix pancit noodles and add soy sauce cook for 5 minutes or until broth is soaked up and noodles are soft.
- 5 add salt and pepper to taste. cut lemon in half and squeeze juice over dish; stir and serve. you may not need whole lemon, depends on your taste.
