Pancit Bihon

Total Time: 1 hr Preparation Time: 45 mins Cook Time: 15 mins

Ingredients

  • 16 ounces rice noodles
  • 1 chicken breast, cooked and shredded (may substitute lamb)
  • 2 cups chicken broth
  • 1/4 cabbage, sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 cup cauliflower floret
  • 1 cup snow peas
  • 1 cup bean sprouts
  • 1/3 cup scallion, diced
  • 1 carrot, sliced julienne
  • 2 tablespoons cooking oil
  • 3/4 cup celery, diced
  • 3 tablespoons soy sauce
  • 1 liter water, cold
  • salt, to taste
  • pepper, to taste
  • 5 kalamansi, sliced

Recipe

  • 1 soak the pancit bihon noodles in cold water for 10 about minutes to soften.
  • 2 add cooking oil to a large pan or wok with medium flame. saute the garlic and onions.
  • 3 add the chicken broth, shredded chicken breast (or lamb) and the remaining vegetables, saute until cooked.
  • 4 add the rice noodles and soy sauce, cook for additional 5 minutes or until the noodles have softened.
  • 5 add salt and pepper to taste.
  • 6 serve hot with sliced kalamansi on the side.
