Hearty Vegetable Soup

Ingredients

• 3 cups beef broth
• 3 cups water
• 1/8 cup vegetable oil
• 1 package beef stew meat, quartered
• 2 medium yellow onions, sliced
• 3 carrots, sliced
• 1/2 large cabbage, chopped
• 2 cups fresh mushrooms, sliced
• 3 medium potatoes, diced
• 2 cloves fresh garlic, minced
• salt
• course black pepper

Recipe

• 1 in a soup pot heat the oil, add the stew meat, garlic, onions, salt& course pepper.
• 2 cook on medium heat until browned, approximately 6 minutes.
• 3 stir in beef broth, water, carrots, reduce heat& simmer for 30.
• 4 add mushrooms, potatoes& cabbage simmer 30-40 minutes until done.
• 5 you can omit the meat if you choose to& just lightly saute the garlic& onions.
