Ingredients

- 2 large carrots (grated)
- 1/2 cucumber (minced)
- 1/2 lemon, juice of
- 1/4 teaspoon salt
- 6 cherry tomatoes (halved)
- 3 cups baby spinach leaves
- 1/2 cup purple cabbage (shredded)
- 1/2 zucchini (yellow, grated)
Recipe
- 1 combine all ingredients except for spinach and toss.
- 2 arrange spinach on 6 plates and top with salad mixture.
