Crock Pot Vegetable Beef Barley Soup

Total Time: 8 hrs 20 mins Preparation Time: 20 mins Cook Time: 8 hrs

Ingredients

  • Servings: 10
  • 3/4 cup chopped onion
  • 3/4 cup cut green beans
  • 2/3 cup uncooked barley
  • 2/3 cup frozen corn, carrots & peas mix
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
  • 1 1/2 lbs beef stew meat, - 3/4-inch squares
  • 1/2 cup bell pepper (small pepper)
  • 1/2 cup pearl onion (i use frozen )
  • 2/3 cup diced potato
  • 2/3 cup chopped cabbage
  • 2 cans beef broth, - 14 1/2 ounces each
  • 2 cans diced tomatoes with garlic, undrained - 14 1/2 ounces each
  • 1 can tomato sauce, - 8 ounces

Recipe

  • 1 mix all ingredients in a 6 quart slow cooker.
  • 2 cover and cook on low 8 to 9 hours or until vegetable and barley are tender.
