Crock Pot Vegetable Beef Barley Soup

Ingredients
- Servings: 10
- 3/4 cup chopped onion
- 3/4 cup cut green beans
- 2/3 cup uncooked barley
- 2/3 cup frozen corn, carrots & peas mix
- 1 1/2 cups water
- 1 teaspoon salt
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
- 1 1/2 lbs beef stew meat, - 3/4-inch squares
- 1/2 cup bell pepper (small pepper)
- 1/2 cup pearl onion (i use frozen )
- 2/3 cup diced potato
- 2/3 cup chopped cabbage
- 2 cans beef broth, - 14 1/2 ounces each
- 2 cans diced tomatoes with garlic, undrained - 14 1/2 ounces each
- 1 can tomato sauce, - 8 ounces
Recipe
- 1 mix all ingredients in a 6 quart slow cooker.
- 2 cover and cook on low 8 to 9 hours or until vegetable and barley are tender.
