Solar Cooked Hawaiian Kalua Lamb

Total Time: 4 hrs 5 mins Preparation Time: 5 mins Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 2 lbs lamb shoulder (butt)
  • 1 1/2 teaspoons liquid smoke, to taste
  • 2 teaspoons hawaiian sea salt, to taste
  • 1 banana peel

Recipe

  • 1 season the lamb shoulder with sea salt.
  • 2 rub liquid smoke on the lamb.
  • 3 place banana peel on top of the lamb. (banana peel replaces banana leaves for flavor).
  • 4 transfer lamb to solar cooking pot and place in solar cooker.
  • 5 solar cook until it is completely cooked (about 4 hours).
  • 6 when lamb is done, pull apart/shred.
  • 7 serve with rice, stir-fried cabbage, and macaroni salad.
