Minestrone

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs lean ground beef
  • 2 medium onions
  • 1 teaspoon parsley (dry)
  • 4 garlic cloves (minced)
  • 1/2 cup celery
  • 1/2 cup carrot (sliced)
  • 1 cup cabbage (chopped)
  • 1 (14 ounce) can beans (lima)
  • 16 ounces tomatoes (stewed)
  • 6 cups beef bouillon
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 dash cayenne pepper
  • 1/2 cup spaghetti (broken)
  • 1 dash salt and pepper
  • 1/4 cup parmesan cheese (optional)

Recipe

  • 1 brown meat and onions.
  • 2 place in large pot.
  • 3 add garlic and celery. cook for 10 minutes stirring continually.
  • 4 add 6 cups of beef bouillon and remaining ingredients except spaghetti and cheese.
  • 5 bring to boil, cover and simmer 30 minutes.
  • 6 add spaghetti and simmer till tender. (~10 minutes).
  • 7 serve and add parmesan cheese on top.
