Curried Shrimp Salad With Fruit And Veggies

Ingredients

- 1/4 cup low-fat greek yogurt
- 1 teaspoon curry powder, to taste
- 1/8 teaspoon ground ginger
- 1/8 teaspoon salt
- 8 teaspoons regular mayonnaise
- 8 ounces cooked shrimp
- 1/4 cup red bell pepper, diced
- 8 grapes, halved
- 1/4 cup crushed pineapple, rinsed and drained
Recipe
- 1 combine yogurt, mayonnaise, curry powder, ginger, and salt.
- 2 add pineapple and stir.
- 3 add shrimp and grapes.
- 4 cover and chill for at least 1/2 hour.
- 5 serve over lettuce or shredded cabbage.
