Crispy Ginger Slaw

Ingredients

  • Servings: 6
  • 2 cups napa cabbage, shredded (or regular green cabage)
  • 1 cup carrot, shredded
  • 1 cup snow peas, slivered
  • 2 tablespoons cilantro (optional)
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 3 tablespoons sesame oil
  • 3 tablespoons vegetable oil
  • 2 tablespoons sugar
  • 2 tablespoons mirin
  • 1 garlic clove, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon lime juice (fresh is best)
  • 1/4 teaspoon cayenne pepper

Recipe

  • 1 make the dressing.
  • 2 combine all of the dressing ingredients in a small bowl. cover and refrigerate for several hours, or overnight.
  • 3 in a serving bowl, combine cabbage, carrots, and snow peas.
  • 4 add dressing and toss to coat all of the vegetables.
  • 5 top with cilantro (if using).
  • 6 serve immediately!
