Portuguese Bean Soup

Ingredients

- 1 lb dried kidney beans
- 4 quarts water
- 1 large smoked ham shank
- 1 (8 ounce) can tomato sauce
- 1 cup chopped onion
- 1 garlic clove, minced
- 2 tablespoons salt
- 1/2 teaspoon pepper
- 2 cups cubed potatoes
- 1 1/2 cups diced carrots
- 6 cups shredded cabbage
- 8 ounces uncooked spaghetti, broken into small pieces
Recipe
- 1 wash & drain beans.
- 2 in an 8 qt kettle, bring water to boil.
- 3 add beans, ham, tomato sauce, onion,garlic, salt, and pepper.
- 4 bring to a boil; reduce heat and simmer covered 5 hrs (you could use a crock pot).
- 5 add potatoes, carrots, cabage, and spaghetti.
- 6 bring to a boil.
- 7 reduce heat and simmer uncoverd 15-20 minutes or until potatoes are tender.
- 8 remove ham.
- 9 remove meat from the bone and cube.
- 10 return meat to soup.
- 11 serve with garlic bread and salad.
