Portuguese Bean Soup

Total Time: 5 hrs 20 mins Preparation Time: 20 mins Cook Time: 5 hrs

Ingredients

  • Servings: 12
  • 1 lb dried kidney beans
  • 4 quarts water
  • 1 large smoked ham shank
  • 1 (8 ounce) can tomato sauce
  • 1 cup chopped onion
  • 1 garlic clove, minced
  • 2 tablespoons salt
  • 1/2 teaspoon pepper
  • 2 cups cubed potatoes
  • 1 1/2 cups diced carrots
  • 6 cups shredded cabbage
  • 8 ounces uncooked spaghetti, broken into small pieces

Recipe

  • 1 wash & drain beans.
  • 2 in an 8 qt kettle, bring water to boil.
  • 3 add beans, ham, tomato sauce, onion,garlic, salt, and pepper.
  • 4 bring to a boil; reduce heat and simmer covered 5 hrs (you could use a crock pot).
  • 5 add potatoes, carrots, cabage, and spaghetti.
  • 6 bring to a boil.
  • 7 reduce heat and simmer uncoverd 15-20 minutes or until potatoes are tender.
  • 8 remove ham.
  • 9 remove meat from the bone and cube.
  • 10 return meat to soup.
  • 11 serve with garlic bread and salad.
