- 1 lb red cabbage, cored and shredded
- 1 1/2 cups beef stock
- 1/2 cup brown sugar, firmly packed
- 1/2 cup cider vinegar
- 4 tablespoons butter
- 1/4 teaspoon black pepper, freshly ground
- 1 pinch salt
Recipe
- combine all the ingredients, except the salt, in a 10- to 12-quart stainless-steel pot.
- bring to a boil, stir, cover, and simmer over low heat, stirring occasionally, 1 hour and 15 minutes.
- add salt to taste.
