Skinny-minnie Soup

Ingredients

  • 1 small head of cabbage, chopped
  • 2 cups celery, chopped
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 10 cups water
  • 1 (10 ounce) box frozen mixed vegetables
  • 1 (10 ounce) box of frozen yellow squash or 1 (10 ounce) box cauliflower or 1 (10 ounce) box green beans
  • 2 (12 ounce) cans v-8 juice
  • 1/3 cup beef bouillon granules
  • 1 tablespoon chopped parsley
  • 1 tablespoon knorr swiss armat seasoning for meat
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sage
  • 1/2 teaspoon tarragon

Recipe

  • 1 boil for 20 minutes cabbage, celery, onion and bell pepper with 10 cups water. add frozen mixed vegetables and squash; cook 10 minutes. add remaining ingredients. cook 1 hour longer. contains 54 caleries per 8 oz. serving.
